Vegan S-nickers Ice-Cream slabs

This recipe is one of our all time favourites, my husband used to be a fan of the s-nickers ice-creams you buy from the shops until he tried my version, he is definitely a convert now. In his words "These can't be healthy".

You will need: 20cm x 12.5cm rectangular flan tin (with push out base).



Ingredients

Base Ingredients
  • 1/2 cup gluten free oats
  • 3/4 cup macadamia nuts
  • 1 cup medjool dates
  • 1 tbs rice malt or coconut syrup
  • 1 tbs cacao powder
Ice-Cream Ingredients
  • 1 cup coconut cream (full cream)
  • 2 heaped tbs natural smooth or crunchy peanut butter
  • 2 tbs maple syrup
  • 5 medjool dates
  • pinch himalayan crystal salt
  • 1 tbs coconut oil
  • 1 cup whole natural peanuts
Chocolate Topping Ingredients
  • 2 tbs melted coconut oil
  • 1 tbs cacao powder
  • 1-2 tbs maple syrup (2 if you prefer sweeter)
  • 1/2 tsp vanilla powder

Method

Method

Blend all base ingredients in a food processor until they stick together and press evenly into the base of the flan tin.

Method
  1. Scatter the whole peanut pieces over the top of the base crust.
  2. In a food processor, blend all Ice-cream ingredients (except the whole peanut pieces) until you get a smooth consistency stopping to scrape down the sides every now and then. Pour over the top of base & peanuts.
  3. Gently place in freezer until hardened. (approx 3-4 hours)
Method
  1. Stir all 4 chocolate ingredients together until mixed.
  2. Remove ice-cream slab from freezer and slice into squares.
  3. Drizzle Chocolate over the top and enjoy!
  • Best kept frozen in an air tight container.
