Vegan Superfood Black bean Brownies with Chocolate Fudge Sauce

I made these mouthwatering Superfood Black bean Brownies with Chocolate Fudge Sauce on a lazy Sunday afternoon, it still blows my mind that something made out of black beans, no dairy or refined sugar and simple healthy ingredients can taste so darn good.. Why more people don't cook this way is beyond me, at the beginning of my journey I really didn't think it was possible to substitute meals and snacks that would even come close to tasting like what I occasionally indulged in.. I think more and more people now days are starting to wake up to the fact that we have a multiple of options available to us and so many ways in which we can substitute ingredients without the need of adding unhealthy ingredients in order to make food taste good.

Any hoo, how about you give this recipe a go and see for yourself just what I mean by that, I guarantee your going to love these brownies if done right. Make sure you pair it up with some nice vegan chocolate fudge sauce though to compliment the brownie! :) x



Ingredients

  • 1 400g can certified organic black beans (drained and rinsed well).
  • 1 egg (vegan egg replacer)
  • 1 heaped tbs vegan butter or coconut oil (I used nettlex)
  • 3/4 cup organic cocoa powder
  • 1/2 tsp pure vanilla extract (alcohol free)
  • 1/2 cup pure maple syrup
  • 1.5 tsp baking powder
  • 1 tbs lucuma powder
  • 1 level tbs mesquite powder

Method

  1. Place all ingredients into a food processor and blend for a few minutes until you have a very smooth and creamy, (lump free consistency).
  2. Pour mixture into moulds (I highly recommend using shallow silicone cup cake moulds (0ven safe) which is what I used. If you don’t have or can’t find, standard cupcake cups should do the trick.
  3. Bake for 10 – 15 minutes on 170 Degrees Celsius, or utill the centre has cooked through. (You can check this by sticking a knife or tooth pick through the middle, if it comes out clean then they are ready.)
  4. Allow to rest in moulds for 15-20 minutes before removing otherwise they may fall apart easily.

The Chocolate fudge sauce is by Cocoluscious and is raw vegan. The combo is unreal.. xx
