Chewy coconut macaroons

Yuuuuuuum, I’m so in love with how these turned out, Allot of my recipes are just me having a bit of fun in the kitchen and whacking together what I think might turn out to be a healthy alternative to some of my favourite foods, i’m quite proud of myself for this little creation which tastes 95% just like the originals!

Makes 2 dozen


  • 1 cup almond meal
  • 1 cup organic desiccated coconut
  • 4 tbs 100% pure maple syrup
  • 1 tsp natural almond flavouring/essence
  • 1/2 tsp natural vanilla extract
  • a pinch of Himalayan crystal salt
  • Egg white from 1 large organic egg
  • Raw whole almonds


  1. Place all ingredients except the raw whole almonds into a mixing bowl and stir together with a wooden spoon until well combined
  2. Line a baking tray with baking paper
  3. shape your cookies and place an almond on top of each cookie and place on tray.
  4. Bake in oven at 180 degrees/340F for 10 – 15 mins or until lightly browned (keep a constant eye on them to make sure they don’t burn)
  5. Remove tray from oven and allow to cool for 10 mins and enjoy!
