Vegan Pizza Bases

After a pizza base that actually has some nutritional value, no preservatives! gums or sugar? Then these are the pizza bases for you! Now, I know I typically post gluten free recipes however the gluten in spelt has never affected me hence why I've used it. (The gluten in spelt is very fragile and more water soluble making it easier to digest. It is also higher in fibre than wheat, the extra fibre aids in the digestion of gluten making it a good option for those who have a low tolerance like myself.


Makes: 5-6 pizza bases

Prep time: 30-45mins


  • 1/2 head of a cauliflower (minus the stalk)
  • 3 cups white spelt flour (or gluten free flour for celiacs).
  • 1 vegan egg replacer
  • pinch dried oregano
  • 2 tbs nutritional yeast
  • 1 tsp garlic powder


  1. Pre heat oven to 200 degree centigrade
  2. Place head of cauliflower in food processor and blitz until it turns into rice like consistency.
  3. Place riced cauliflower in a large bowl along with all remaining ingredients. Mix until all ingredients are incorporated, then start kneading into a dough on a clean bench top or large chopping board lightly dusted with flour.
  4. If consistency is to wet or sticky, add a little more flour. If not wet enough, add 1 more egg. Once you have the perfect dough, set aside to prepare the pizza/baking trays.
  5. lightly sift flour over pizza trays. Then quarter your dough.
  6. On each pizza tray, start shaping each quarter into pizza bases. If there are wet/sticky areas on pizza, sift a little more flour.
  7. Bake until lightly browned. Remove from oven.
  8. Top pizzas with pizza sauce and your choice of pizza toppings. Place back in oven for further 15 minutes to cook/melt toppings depending what you’ve gone with!
