Chocolate Fudge Cookie Sandwiches 

I love anything chocolate and these are most definitely a chocolate lover’s dream come true!

With a soft, slightly chewy biscuit and fudgy  chocolate creme centre that will have your taste buds dancing, you wouldn't even know you are eating a healthy guilt free cookie!

 



Ingredients

Ingredients for cookies
  • 1 cup blanched almond meal
  • 1/2 cup gluten free flour ( I prefer Orgran or Bob Mills)
  • 1/2 cup cocoa powder
  • 1/2 cup + 1 tbs coconut sugar or 1 level tbs fine stevia (add more if you prefer sweeter) (Pure Maple syrup is also an option, add 1/4 cup)
  • 1 tbs vegan butter  (Melted – I used nuttlex)
  • 1/3 cup coconut cream (full fat) Please note: (depending on the sweetener you use will depend if you need a little more or not, you can tell you have the right consistency when the mixture holds together, not to dry and not to runny..)
  • 1 tsp baking powder
  • 1/4 tsp baking soda
  • 1/2 tsp vanilla bean paste
  • 1 egg (I used vegan egg replacer by orgran)
Ingredients for chocolate creme filling
  • 2 tbs coconut paste ( Melted – I used Loving Earth)
  • 1 tbs pure maple syrup
  • 1 tbs cocoa powder
  • 3 drops vanilla essence or 1/4 tsp vanilla bean paste

Method

Method for cookies
  1. Combine all ingredients in a bowl and mix until uniform.
  2. Shape into cookies on a lined baking tray and bake on 180 degrees celsius until slightly browned on edges. (Check at 15 minutes)
  3. Allow to completely cool down before proceeding to next step.
Method for filling

Mix all ingredients until combined and using a spoon, dollop mixture between 2 cookies to create your sandwiches and enjoy!
