Moist Choc Chip & Macadamia Chocolate Muffins! Get in ma belly!

These are seriously the yummiest vegan muffins I've whipped up to date! They are super moist and are dairy and refined sugar free, therefore much healthier than regular muffins. Kids absolutely loved too! #winning!

Ingredients

  • 1 cup almond meal
  • ½ cup gluten free plain flour
  • ½ tsp baking powder
  • ½ tsp baking soda
  • 1 cup coconut sugar
  • 1/3 cup cocoa powder
  • pinch himalayin rock salt
  • ¼ cup coconut spread/oil (melted)
  • ½ cup thickened coconut cream (full fat)
  • 2 tbs coconut or nut milk
  • 2 eggs (I used vegan egg replacer by Orgran)
  • 2 tbs pure maple syrup (optional/I added however only add if you prefer a little sweeter)
  • ½ tsp vanilla essence
  • 1/2 cup dairy free chocolate chips
  • ½ cup chopped raw macadamia nuts

Method

  1. Combine all dry Ingredients in one bowl and wet ingredients in another (except the nuts and chocolate chips).
  2. Combine all ingredients together in 1 bowl and mix well.
  3. Spoon mixture into patty cakes and bake on 180 degrees Celsius for 15 minutes or till cooked through (check by sticking a knife through the middle, you will know if they are baked if the knife comes back out without wet mixture.
  4. Allow to rest for 10 minutes and enjoy!
