No bake vegan salted caramel slices

Loooooove a good caramel slice, even more so when you know it's a cleaner version! Everyone who has tried this recipe falls in love, it's still blows me away knowing what you can re-create using healthier substitutes!



Ingredients

Base Ingredients
  • 1 cup macadamias/walnuts or almonds
  • 2 medjool dates
  • 1 tbs coconut oil
  • 1 tbs cacao
  • Pinch Himalayan crystal salt
  • ½ tsp vanilla extract
  • 1 tbs almond butter or more dates
  • 2 tbs coconut shreds (optional)
  • 1 tbs maple or rice malt syrup
Caramel Ingredients
  • ½ cup unhulled tahini
  • ½ cup maple syrup or agave
  • ¼ cup melted coconut oil
  • 1 tsp vanilla essence or vanilla bean paste
  • Large pinch Himalayan crystal salt
Chocolate icing Ingredients
  • 10 medjool dates
  • 1 tbs coconut cream
  • 1/2 tsp vanilla extract
  • 1 Tbs cacao
  • 1 tbs maple syrup

Method

Method

Blend in food processor until ingredients stick together, press into a long rectangular flan tin that has a push out base.

Method

Mix all ingredients together in a small bowl, pour over base & freeze for 1-2 hrs to set.

Method

Blend in food processor for 10mins until you get the sauce like consistency, pour on top of slice & freeze for a further 1-2 hrs for final setting. Slice & serve, keep sealed & stored in freezer.
