Polenta & Corn Fritters
Perfect for a light lunch, brunch or as a side at dinner, these divine fritters are packed with healthy fibre for your family!
Makes 16 Fritters
Ingredients:
375ml water
½ tsp rock salt
½ cup polenta
½ cup corn kernals or ½ cup red capsicum
¼ cup spring onions (finely sliced)
1 tbs parsley (finely chopped)
1 small clove garlic (minced)
1/3 cup gluten free plain flour
¼ tsp baking powder
1 egg (vegan replacer)
pepper & salt (to taste)
olive oil (enough to cover base of pan)
Method:
1 – In a saucepan, bring water and salt to the boil and gradually add polenta, stirring continuously for 3-5 minutes (or until polenta be-comes thick and comes together like glue.)
2 – Take off heat and add corn, spring onions, parsley and garlic. Stir until combined, transfer to bowl, and leave to cool.
3 – Sift flour and baking powder together, and combine polenta mixture. Add egg, salt and pepper.
4 – Heat the oil in the pan (on medium to high heat) and place tablespoons of mixture into the pan the shape of small fritters. Cook for 1 – 2 minutes on each side.
