Raw Vegan Choc Mint Ice Cream Sandwiches

Choc Mint would have to be  one of my favourite flavour combinations. Especially after dinner as a refreshing sweet treat.

This Raw dessert is completely vegan, gluten and refined sugar free as well as low in nuts.

Yields: 4 Ice Cream sandwiches 

Prep Time: 15-20 minutes




Base Ingredients
  • 1/2 cup raw macadamia nuts
  • 8 large medjool dates
  • 1/3 cup unsweetened coconut shreds
  • 1 tbs cacao powder
  • 1 tsp coconut nectar
Mint Ice Cream & Chocolate layer
  • 350 g coconut cream (full fat)
  • 1 cup unsweetened coconut shreds
  • few drops certified organic/food grade peppermint oil
  • 3-4 tbs coconut nectar or 2 tbs pure maple syrup (however please note maple syrup is not raw)
  • 1/2 tsp spirulina powder (for colour)
  • tbs lucuma powder (optional/adds to the creaminess)


Base Method
  1. Blitz all ingredients in food processor until sticky
  2. press into small flan tins that have push out bases
  3. set aside
Mint Ice Cream & Chocolate layer Method
  1. Blitz all ingredients in high speed blender until very smooth and creamy. Stop to scrape down sides every now and then.
  2. pour over base and place in freezer over night.
  3. Once ready to serve. Melt down some of your favourite raw vegan chocolate and pour over the top. You will need approx 100g chocolate.
