Raw Vegan Chocolate Mud Cake

Oooh yeah, raw vegan Chocolate mud cake! Before going predominately vegan, I loved Mud Cake and was so happy when I found out I could substitute with these amazing and healthy ingredients & still have my cake and eat it too! You still get the density and chocolaty texture minus the guilt, have it with some fresh strawberries and this is heaven.

Raw Vegan Chocolate Mud Cake

Base ingredients

1 cup mixed nuts (I used macadamia & pecans)

7 soft Medjool dates

2 tbs cacao powder

1-2 tbs coconut nectar or pure maple syrup

pinch himalayan crystal salt

1 tbs filted water

Method: In a food processor, pulse base ingredients until they stick together. Press/mould into a 20 - 23 cm round cake tin that has a push out base.

Chocolate mud cake ingredients

2 cups raw cashews (soaked in filtered water for at least 8 hours)

2 tbs cacao powder

1/2 tsp vanilla bean paste

1 heaped tbs coconut oil or coconut butter

1/2 cup pure maple syrup

3-4 medjool dates

pinch himalayan crystal salt

2 tbs filted water

Method:  1 - Blend all chocolate mud cake ingredients in food processor until very smooth and creamy. The longer you pulse the smoother it gets. Stop every now and then to scrape down sides then pour over base.

2 - Freeze overnight. When ready to serve, remove from cake tin & melt raw vegan chocolate and drizzle over the top! ( I used Loving Earths raw vegan salted caramel and plain chocolate!
