You really can't go wrong with an apple crumble, it's an oldie but a goodie that everyone loves! Today i've added raspberries into the mix as It's such a beautiful combo and compliment each other quite nicely! I recommend serving this one up when warm with a side of dairy free vanilla ice-cream! Such a winning dish!
Vegan Apple & Raspberry Crumble
Preheat oven to 180 degrees Celcius
Base Ingredients:
1 cup gluten free all purpose flour
1 cup desiccated coconut
2 tbs coconut sugar
2 heaped tbs vegan butter (I used nuttlex)
Method for Base/crumble:
1 -Blend all bases ingredients in food processor until they stick together. If you want to avoid using a food processor you can simply melt the butter and mix everything together with a wooden spoon until they stick together.
2 - Press crust ingredients (leave about 1 cup out for topping) into a 15-20cm flan tin with push out base moulding your way up the sides of tin.
Filling Ingredients:
1 ripe gala apple
2 cups fresh or frozen raspberries ( I prefer fresh however used frozen organic for this one)
1-2 tsps coconut sugar
Method for Raspberry & Apple crumble:
1 - Peel and dice apple then place in a pot of boiling water for 5 mins or until semi soft then drain.. ( I left mine too long and it ended up turning into a puree! Still nice but not the desired texture I was after! ) :(
2- Combine the apple, raspberries and coconut sugar together in a bowl and stir to combine the ingredients. Spoon on-top of base.
3- Sprinkle with remaining crumble and place in over for 20-30mins or until golden brown. Allow to rest for 15-20mins and serve!
