Vegan veggie & tofu rice paper spring rolls

If i'm to be completely honest with you, I would tell you that I  find eating vegetables on their own quite boring, put them into a rice paper spring rolls & dip them in sugar free sweet chilli sauce and i’ll eat them like there’s no tomorrow..

This is a great way to get your veggies in if your someone like me and they are soooo deliciously good!

  • Rice paper sheets
  • packet Vermicelli rice noodles
  • organic plain hard tofu
  • 1 large avocado
  • 1 red capsicum
  • 1 large carrot
  • 1 cucumber
  • Ice berg lettuce
  • fresh mint leaves
  • Sweet chilli sauce (sugar free)

Method

Method
  1. You will need to start preparing your ingredients by first of all julienning (thinly slicing) all your vegetables & mint. Once done, set aside.
  2. Lightly fry the tofu in coconut oil and cut into strips & place on a small plate
  3. cook vermicelli noodles according to packet instructions
  4. prepare rice paper sheets according to packet instructions
  5. Once everything is prepared, place a little of each ingredient in the middle of a rice paper sheet and wrap them tightly until sealed.
  6. Dip into sweet chilli sauce & enjoy
