Chewy Chocolate Chip Macaroons!

Gluten free, vegan & soo delicious, Yep, this just happened and I can't get enough! These taste bombs are soft on the inside with a perfect chewy outer layer which is a texture I try and always achieve when making cookies. Ive use minimal ingredients without compensating on taste which is a win for everyone. The longer you allow the cookies to rest the chewier they become..

  • 1 cup blanched almond meal
  • 9-10 medjool dates (pitted)
  • 2 tbs organic cocoa powder
  • 1 tbs ground chia seed flour
  • 1/4 cup coconut nectar or pure maple syrup
  • 1/3 cup vegan chocolate chips



  1. Combine all Ingredients (except chocolate chips)  in a food processor until sticky.
  2. Form into cookies Place on a lined baking tray and lightly press chocolate chips over and a few into the cookies. .
  3. Bake on 160 degrees celcius for 15 minutes or lightly hardened. (They cook very quickly and also burn very easily so keep an eye on base of cookies!)
  4. Remove from oven and allow to rest for 10-15 minutes.
