Vegan Tim Tam Inspired Ice-Cream Bars

These Tim Tam inspired bars are to die for. I know allot of you might look at the ingredients and wonder if the avocado or banana would dominate the flavour however you really don't even taste them.

Adding cocoa, lucuma and sweetener kind of knocks these stronger flavours out.

They are creamy, addictive and everyone in the family are going to love :)

Yields: 8-10 small bars



Ingredients

Base and Top Layer Ingredients
  • 3/4 cup lightly salted roasted macadamia nuts. (salted or not is optional)
  • 8-10 medjool dates
  • 1 level tbs cocoa or cacao powder
  • dash pure maple syrup, coconut nectar or rice malt syrup
Chocolate Ice Cream layer Ingredients
  • 1/2 ripe avocado
  • 1 small ripe banana
  • 2 tbs cocoa powder
  • 1/2 cup coconut nectar or pure maple syrup
  • 1 tbs lucuma powder
  • 1 tsp vanilla bean paste
  • 1 heaped tsp coconut oil

 

  • 3 x 80g block of raw vegan chocolate for coating

Method

Base and Top Layer Method
  1. Blitz all ingredients in a food processor until sticky.
  2. Press evenly into the base of a rectangular or square flan tin that has a push out base
  3. Place in freezer to set for 1.5 hours
Chocolate Ice Cream layer Method
  1. Place all ingredients (except the chocolate for coating), into a high speed blender such as a vitamix or kitchen aid.. Blend on highest speed until very smooth and creamy. Stop once in a while to scrape down sides.
  2. Remove base from freezer
  3. Cut right down the middle to create to halves. One half will be for the base and the other half will be the top layer..
  4. Pour Icecream mixture over base
  5. Place the top layer ontop
  6. freeze over night
  7. Slice into small squares
  8. Melt raw vegan chocolate and coat each square using a bakers brush.
  9. Place in freezer for a further 30 minutes to set
