Gluten Free Raspberry & Vanilla Friands

This recipe would definitely have to be one of my most used recipes! Whenever we have guests coming over it's always on my list of things to make as everyone seems to just love them and are always surprised when I tell them they are sugar & dairy free! They have a Friand texture and flavour and you can use just about any berry you desire if raspberries aren't in season or stock.

Ingredients
  • 1 cup almond meal
  • 1/2 cup gluten free all purpose baking flour
  • 1 tsp gluten f baking powder
  • 1/4 tsp gluten free bi carb soda
  • few drops natural vanilla essence
  • 1/4 tsp vanilla powder or vanilla bean paste
  • Stevia (start with 1/2 tsp as the potency of stevia varies significantly, add more according to taste) 
  • 2 tbs maple syrup
  • 3/4 cup coconut milk 
  • 1 tbs coconut oil
  • 1 cup fresh or frozen organic raspberries (I used fresh)
  • 1 organic egg (Flax or vegan egg replacer for vegan)

Method

Preheat oven to 180dc/340F

  1. Combine all dry ingredients in a bowl until incorporated. 
  2. Combine all wet ingredients except raspberries & mix well. 
  3. Combine & mix both dry & wet ingredients together, Place raspberries on top as they will sink in themselves. 
  4. Pour mixture into patty cups 1/2 full. Place in oven and bake for 15-20 or until lightly browned and cooked right through
