Quinoa Tabbouleh salad

I love a good middle Eastern inspired dish every now and then, this makes for such a delicious light meal when paired with some hummus and falafels, only these are not falafels, tonight I have gone with some healthy gluten free lentil bites I found from my whole food grocer, either way, the flavour combo is sooo delicious!  :)

Ingredients

Ingredients
  • 1 bunch fresh flat leaf parsley, finely chopped (approx 1/2 – 1 cup)
  • 1/2 cup white quinoa (cooked according to packet instructions)
  • 2 large organic tomatoes, finely chopped
  • 1 tbs fresh mint leaves, thinly chopped
  • 2 tbs red onion, thinly chopped
  • himalayan crystal salt to taste
  • 1/4 cup extra virgin olive oil
  • 2 tbs fresh lemon juice

Method

1. Once quinoa has been cooled right down, place all ingredients into a large bowl and mix.

*Serving suggestions: Falafels, lentil patties, hummus, roast vegetables.
