I made these Super quick & easy raw vegan chocolate chews to keep in the freezer for whenever I feel like treating myself. You really can't go wrong with a chocolate caramel combo, particularly when it's healthy and guilt free!
Raw Vegan Choc Caramel Chews
Yields approx: 7 chews
Ingredients for caramel:
3/4 cup un-hulled tahini (Texture of tahini must be thick/the part with less oil)
2 - 3 tbs pure maple syrup
few drops natural vanilla essence
1 crack of himalayan crystal salt (tiny pinch) (optional)
Method for caramel:
Stir all ingredients until incorporated, roll into balls and flatten into biscuit shapes. I added caramelised buckinis on top of a few ( by Loving Earth), this is optional and adds a really nice texture to the chews and I actually much prefer them this way. Freeze until hardened (approx 3-4 hours)

Chocolate Ingredients:
2 tbs coconut oil (melted)
1 heaped tbs cacao powder
1/4 tsp vanilla powder
1 tbs pure maple syrup
Method for chocolate:
In a small bowl, stir all chocolate ingredients together, dunk caramel chews into chocolate and place on a lined tray. return to freezer for 20mins to set.
