Raw Vegan Choc Mint Superfood “Ice-Cream” Bites

Hey guys!

As promised, here is the recipe to these super refreshing and easy to make chocolate mint ice cream bites. Need I say that yes, they are vegan, gluten free, refined sugar free and all of the above! Hug me later and yes I love you too ;) xx

 



Ingredients

Mint Ice Cream
  • 1.5 cups raw organic cashews
  • 1/2 tsp spirulina powder
  • 1/4 cup pure maple syrup
  • 1 tbs coconut oil
  • few drops natural mint drops
  • 1/2 cup unsweetened coconut or nut milk
  • 1 tsp lucuma powder (optional but oh so good!!)
Chocolate Shell DIY or Pre made!
  • 1 cup cacao butter buttons
  • 1 tbs coconut oil
  • 1 tsp lucuma powder
  • 1/2 tsp mesquite powder
  • 1/4 cup maple syrup
  • 2 tbs cacao powder
  • few drops vanilla essence

* Alternatively buy 3 80g blocks raw vegan plain chocolate from you local health food store! I love the brand Loving Earth!

 

Method

Method for ice-cream

Place all ingredients into a high speed blender and blend until very smooth, lump free and creamy. Pour about a tablespoon amount of the mixture into small round cupcake like silicone moulding trays or even round patty cup cake cups if you don’t have. Freeze for 3+ hours.

Method for Chocolate Shell
  1. In a double boiler, melt the cacao butter buttons and coconut oil. Add remaining ingredients and stir until all combined. Place in a high speed blender and blend for a few minutes to bond the ingredients. This step will ensure there is no separation of ingredients and improved the consistency!
  2. Remove ice cream from moulds and dunk into the chocolate sauce placing each one onto a small tray lined with baking paper.
  3. Freeze over night then enjoy!
