Raw Vegan Chocolate Ice-Cream Sandwiches

You saw this coming right? I think i've just about covered every flavour when it comes to vegan ice cream except Chocolate!!!! You know what they say thou right? Save the best for last? Only this isn't going to be the last! It only means I now have to start creating new inventions!! Woo Hoo!

Ive used Du Chocolate* for this treat as I liked the fact that it had the non dairy chocolate powder already sweetened with Natvia which is a natural stevia making it perfect for those wanting to create treats just like this!

You will need: 3 x Ring Moulds

Biscuit layer Ingredients:

1/2 cup raw almonds

1 cup coconut shreds

1 tbs coconut oil

1/4 cup du Chocolate powder liquidised in 1 tbs hot water

4 medjool dates

pinch himalayan crystal salt

Method for Biscuit layer:

1 - In a food processor, combine all biscuit ingredients until they stick together.

2- Place ring on a flat plate that you will later store in freezer. Press biscuit mix into the evenly into the bottom of ring moulds ensuring there is enough left for top layer!

Ice-Cream Ingredients:

1/2 very ripe avocado

1/2 cup full fat coconut cream

1 tbs coconut oil

3/4 cup du chocolate powder liquidised in 1 tbs hot water

1/2 tsp vanilla bean paste

pinch himalayan crystal salt

Note: (If you prefer sweeter, simply add a little more liquidised natvia or 1 tbs pure maple syrup)

Method for Ice cream layer:

1 - In a food processor, blend Ice-cream ingredients for a few minutes until the mixture becomes very smooth and lump free, you will need to stop a few times to scrap down the sides. Once done, pour over the top of biscuit bases and freeze until set.

2- Once set, evenly press the rest of the biscuit mixture over top of ice-cream and return to freezer for another hour.

3- Once set, allow ice-creams to sit for around 10 minutes then hug the rings with warm hands to release from moulds.

3- Drizzle with melted dairy free vegan chocolate and serve!
