Raw Vegan Raspberry Cheesecakes

A Raw Vegan Raspberry Cheesecake slice everyone is going to love. It's healthy, gluten and refined sugar free and tastes phenomenal!

 



Ingredients

Main Ingredients
You will need approx 20 x 10cm rectangular baking tray with push out base.
Base Ingredients
  • 8 medjool dates
  • 1 cup coconut shreds
  • 1/2 cup gluten free oats

Raspberry Cheesecake Ingredients

  • 1 cup raw cashews (pre soaked for 5 hours/drained and rinsed)
  • 2 tbs thickened coconut cream (full cream)
  • 1 cup organic frozen or fresh raspberries
  • 1/4 cup pure maple syrup
  • 1 tbs Lucuma powder
  • 1 tbs Baobob powder
  • 1 tbs coconut oil
  • A squeeze of fresh lemon juice (optional)

Method

Method For Base

Blend all ingredients in your food processor until they stick together. Press into tray base.

Method For Cheesecake
  1. Blend all Cheesecake ingredients in your food processor for a few minutes, (stopping to scrape down sides every now and then), once you reach a smooth and creamy consistency, pour over base and place in freezer to set overnight.
  2. When you are ready to serve, drizzle with melted raw vegan salted caramel chocolate. (The brand I used is Loving Earth).
